Zucchini Noodle Carbonara

Zucchini Noodle Carbonara
I don’t often make real deal carbonara. But when I do, it’s such a treat. But sometimes, you just wanna have a pasta dish that’s on the healthier side, but feels indulgent. This is for you my friends. And it’s SO easy!

Thai Veggie Chickpea Stuffed Sweet Potatoes

Thai Veggie Chickpea Stuffed Sweet Potatoes
I’m SO into everything sweet potato lately. And plant-based meals. I had been eating a lot of meat for awhile, mostly chicken and pork, but some beef too, and I realized how much I miss my beans and legumes! Such a great, cheaper way to get protein. And delicious of course. Pretty sure I’d eat anything if it was covered in peanut sauce. I mean, what is better?!

Mexican Street Corn Chilaquiles

Mexican Street Corn Chilaquiles
Chilaquiles have to be in my top five favorite brunch foods. Actually, make that top five favorite foods EVER. If you’ve never had them, it’s basically fried tortillas which are then cooked in a chipotle/Mexican spiced tomato-y sauce, layered with cheese, and topped with all of the delicious things. Including fried eggs, and in my case, avocado. And we all know how I feel about those two.

Smoked Salmon Crispy Smashed Potato Bites with Avocado Dill Sauce

Smoked Salmon Crispy Smashed Potato Bites with Avocado Dill Sauce
Happy St. Patty’s Day! I have the last Irish-y themed recipe of the week for you today. It started off with the most decadent Irish cream chocolate bread, then we went savory with the super creamy Irish cheddar mac and cheese with crispy pancetta, and finally today’s smoked salmon app! I love these little bites. These little smoked salmon bites are served on my recent addiction: crispy smashed potatoes. Ever since I started making these last fall, I’ve been HOOKED. They’re SO freaking good. My mom and I polish off an entire pan within minutes, every time, without fail.

Irish Cheddar Mac and Cheese with Crispy Pancetta

Irish Cheddar Mac and Cheese with Crispy Pancetta
Mac and cheese is seriously the ultimate comfort food. Especially when it involves more than one cheese and CRISPY PANCETTA. The salty, crispy bites of pancetta add the best flavor dimension to this. In love! Plus it’s Irish themed, and takes less than 30 minutes to make. Perfect for St. Patty’s festivities this week!

My Tips for Sustaining Energy Throughout the Day + During Workouts
Today I’m sharing something a little different. I feel like this is such an important topic, and so many people have questions about it. I’m frequently asked how I stay in shape while being a food blogger, and how I eat healthy while working a full time job and running a blog on the side. It’s all about meal prep and planning my friends.

Irish Cream Chocolate Bread with Espresso Cream Cheese Glaze

Irish Cream Chocolate Bread with Espresso Cream Cheese Glaze
I feel like I should put a warning label on this thing. It’s SO chocolatey and full of Irish cream liquer. And lots of sugar and butter. And regular flour. All the good things. I know it’s not my normal “healthy” recipe on this wonderful Monday, but it’s darn good.

Roasted Cauliflower Kale Salad with Dried Cherries, Walnuts, and Feta

Roasted Cauliflower Kale Salad with Dried Cherries, Walnuts, and Feta
I NEED to add roasted veggies to my salads more often. This was SO delicious. First of all, any deeply roasted veggie is my best friend. And then added to a salad?! My new favorite thing. I’m one of those weirdos that loves salads and craves veggies more than anything. It’s true. The combo of flavors in here is insane. #nosadsalads.
