Smoked Salmon Crispy Smashed Potato Bites with Avocado Dill Sauce

Smoked Salmon Crispy Smashed Potato Bites with Avocado Dill Sauce
Happy St. Patty’s Day! I have the last Irish-y themed recipe of the week for you today. It started off with the most decadent Irish cream chocolate bread, then we went savory with the super creamy Irish cheddar mac and cheese with crispy pancetta, and finally today’s smoked salmon app! I love these little bites. These little smoked salmon bites are served on my recent addiction: crispy smashed potatoes. Ever since I started making these last fall, I’ve been HOOKED. They’re SO freaking good. My mom and I polish off an entire pan within minutes, every time, without fail.

Lightened-Up BBQ Chicken Dip

Lightened-Up BBQ Chicken Dip
Would it be acceptable to only eat appetizers for every meal? Pretty sure I’d be the happiest person ever. In my family I’m known as “the picker.” I LOVE trying a bunch of different things when going out to restaurants, and entertaining with a bunch of apps (and eating off of my family members plates too shhh). I can’t help it! It’s just who I am. This recipe would be PERFECT for entertaining and this weekend’s big game!

Healthier Loaded Crispy Smashed Potato Bites

Healthier Loaded Crispy Smashed Potato Bites
Healthier football food. Yes, it can be a thing. Healthier football food that tastes amazing? That would be these bites. I cannot get over how good these are and how much they taste like the loaded potato skins you’re probably thinking about. First of all, this method of making crispy smashed potatoes is INSANELY addicting. I’m obsessed. My mom and I ate an entire sheet-pan’s-worth in minutes. They’re too good. They even made an appearance as a rosemary garlic version for a Christmas dinner side.

Loaded Sweet Potato Nachos with Greek Yogurt Chipotle Crema

img_0980
I swear I could eat Mexican food for every darn meal and be completely happy. I’m pretty sure my waistline wouldn’t appreciate that though. So, these are a lightened up version of loaded nachos, made with crispy sweet potato “chips!” They’re AMAZING. And somehow I didn’t even miss the chips! The sweetness of the potatoes mixed with the spicy/smoky beef and chipotle sauce is perfection. I hope you’re not sick of all my sweet potato-centric recipes lately..I just love them so much!

Creamy Mushroom and Thyme Tart

img_1638
I’ve always been a huge mushroom lover, but for some reason, I haven’t cooked with them much in the past year. I have no idea why because they’re AMAZING and so flavorful. This tart is making me want to put them in everything. I think I’ve been having a moment with too many brussels and sweet potatoes, so I’ve forgotten about some of my favorite veggies! It’s time to switch things up. This tart is only SIX ingredients and it tastes so fancy and sophisticated! Thanks to our friend, puff pastry.

Parmesan Herb Sweet Potato Stacks

img_1579
This is one of the easiest, if not the easiest recipe on my blog, and one of the most delicious. I might be kind of biased, because sweet potatoes are very close to the top of my favorite foods list. Case in point here, here, here, here, and here…just to name a few.

I can’t help it! I eat them for breakfast with my eggs and veggies, roasted as a dinner side, roasted and dipped in peanut butter (is that weird?), baked and stuffed with chicken and peppers (like fajitas), buffalo chicken, and even yogurt and granola. You name it, I’ve done it. These stacks are no exception to my love.

Cheesy Pesto Sundried Tomato Pull Apart Bread

Can you believe it’s the week of Thanksgiving already?! I can’t. I know it’s cliché, but I really don’t know where time goes. Today, tomorrow, and Wednesday I’ll be sharing three appetizer/side dish recipes for all of you last-minute planners! Starting today, obviously, I’m sharing this beauty of an appetizer. Tons of cheese, crusty Italian bread, tangy, chewy sundried tomatoes, and garlicky basil pesto. All baked together into a pull-apart bread! I could seriously eat this stuff all day, every day, and never get tired of it.

Pumpkin Ricotta Grilled Toasts with Chorizo, Sage, and Toasted Pepitas

I’m all about the apps. Always. I’m pretty sure I could eat a plate of appetizers for dinner every night. I love trying a bunch of different things and having VARIETY in my food..variety of textures and flavors is key.

These cute little toasts are such a flavor bomb of smoky, sweet, creamy, herby, and nutty. And you have crunch! From the toasted pumpkin seeds. You know I always need crunch.
