All things I could totally go for right now. Plus, I used chickpea pasta! Which I’m obsessed with lately. If you’ve never had it, it’s made from chickpeas (obviously) and its a lot higher in protein and fiber, and lower in carbs than regular pasta. Love it!

Is it possible to overdose on brussels? I think I have this winter. I can’t even tell you how obsessed I’ve been with them. I put them in my egg scrambles for breakfast, in veggie bowls for lunch, shredded in salads, roasted in the oven with bacon, in pasta, roasted and dipped in hummus for a snack..you get the picture. This pasta is filled with my favorite way to consume brussels. Roasted and crispy. I also added some thinly sliced shallot, and the outcome was DELISH.

One Pot Chili Mac and Cheese

This might be one of my favorite recipes to date. I CANNOT get over how good it is! I know it may not seem like the healthiest dish, but it is lightened up. There only six ounces of cheese in the whole recipe, and you get a good six to eight portions out of it. It makes a BIG, cozy pot that you can enjoy all week long in this chilly weather. Also, who doesn’t love a one pot meal?! Chili + mac and cheese = a match made in heaven.

Crockpot Short Rib Sauce with Butternut Squash Noodles

There’s something so comforting and special about short ribs. They remind me of chilly weather, cozy fires, and the holidays. They’re one of those meals (at least for me) that you don’t cook often..they’re usually reserved for special occasions. I’m here to change that!

This sauce is SO easy and full of flavor. It feels fancy, but it’s as simple as throwing everything into a pot. You just quickly sear the short ribs, and throw all of the ingredients into the crockpot overnight. And voilĂ ! A comforting meal, with next to no effort. Waking up to the smell of short ribs simmering in tomato sauce, herbs, and garlic isn’t too bad either.

I know, buffalo chicken and “lightened-up” might seem like an oxymoron. THIS though, is insanely delish and you’d have no idea that it’s lightened up. Today was the first day I felt that slight chill in the air, and I looooved it. It makes me so so excited for my favorite food season. Well, season period. So many wonderful flavors and seasonal produce, and also football food. This recipe is absolutely perfect for those Sundays huddled around the T.V., and you don’t have to feel absolutely terrible about eating it. Win win.
