Happy St. Patty’s Day! I have the last Irish-y themed recipe of the week for you today. It started off with the most decadent Irish cream chocolate bread, then we went savory with the super creamy Irish cheddar mac and cheese with crispy pancetta, and finally today’s smoked salmon app! I love these little bites. These little smoked salmon bites are served on my recent addiction: crispy smashed potatoes. Ever since I started making these last fall, I’ve been HOOKED. They’re SO freaking good. My mom and I polish off an entire pan within minutes, every time, without fail.

Shrimp Parmesan Quinoa Skillet

One of the things I remember eating a lot of growing up was chicken parm. My mom bought those breaded chicken cutlets, topped them with marinara, slices of provolone and grated parm, and then baked it in the oven. Served with heaps of spaghetti and garlic bread of course. That thick Texas toast variety..remember that? SO delicious but not the healthiest thing ever.

I wanted to make a bit of a lightened up version, but with shrimp! The shrimp is baked, and it gets super crispy from the panko..I absolutely love it. The rest of the dish is cooked in one skillet on the stove. Can’t beat it!

Chili Lime Salmon with Mexican Street Corn Sauté

Combining two of my favorite loves..salmon and Mexican street corn was such a good idea. This is going into the weeknight dinner rotation because it’s so quick and easy, and flavorful as heck. It can be repurposed into so many things like tacos, for example. Probably a given, I know. Or, you can add it to a bed of greens!

The salmon is super easy. It gets rubbed with some of my favorite spices, and then gets topped with a little lime juice and zest. Next, it goes into the oven for a quick 20 minutes, and that’s it! I make this version often because it’s delicious and takes no time.

Salmon, Broccoli, and Lemon Chickpea Pasta with Sundried Tomatoes and Basil

You know those times when you’ve indulged a bit too much, but you don’t feel like detoxing on plain chicken and salad and steamed veggies forever? This is where this pasta comes in. Like those Mondays when you’re not quite ready for it to be Monday, but you still want something healthy after the weekend…you know exactly what I’m talking about.

My new obsession is chickpea pasta. It’s so much higher in protein and fiber than regular pasta, and way lower in carbs. You can actually feel good about eating it and not super weighed down. I mean I still looove me some regular pasta, but this is great when you want a little bit of a healthier option!

Scallops will forever be one of my favorite foods. There’s something about their delicate flavor and sweetness when caramelized. I can’t get enough! My dad is the same way. I’ve learned well from both of my parents..they both have great palates. Growing up around such amazing food and family influenced a huge part of who I am today. I was always obsessed with food, from the time I was two years old, stealing food from my (at the time), 7 year old brother’s plate. There was never any stopping me and my appetite..and I can tell you not much has changed 🙂

“BLT” Salmon Burgers with Bacon + Spicy Tomato Jam + Avocado Cream

Holy flavor. These burgers are definitely one of my favorite things I’ve made for the blog in awhile. And the tomato jam…I could put that stuff on everything. This combo of flavors is so freaking good. The burgers are super simple and flavorful, but the homemade condiments actually MAKE this sandwich. So does the bacon..but I figured that was a given.

I made these after work yesterday for taco Tuesday and by the time I got to photographing it was already dark out 🙁 I hate how it’s getting darker earlier already! But I do looove fall. The end of summer is always bittersweet. So on to these tacos! The idea was inspired by my boyfriend and I’m obsessed with how these turned out. Combining two of my favorite foods (sushi + tacos) couldn’t have been a better idea. So many textures and flavors! Such a surprise that I love them, right?
