I go through food phases A LOT. For a week or two I’ll eat quinoa in so many things, and then I won’t have it for months. Same thing happens with smoothies for breakfast, energy bites for snacks, yogurt bowls, they’re all on rotation. I could go on and on. That is what happened this week. Lately I’ve been doing mostly lean proteins and roasted veggies for dinner. I forgot about how much I love meatless meals and all the protein and nutrients different grains can provide. These are SO good you guys. And hearty! Definitely not a sad meatless burger.

You can never have too many versions of avocado toast. As someone who eats it ALL the time, I’m talking breakfast, lunch, dinner, snack…it never gets old. I’m usually an avocado toast purist. Grainy, crusty bread, buttery smashed avo, a little sea salt, and that’s it. And almost always a runny egg or egg whites, depending on my mood. Sometimes sautéed spinach or veggies too. I don’t discriminate! It’s all delicious.

These may just be the BEST tacos I’ve ever made. And I’ve made a TON of tacos. I’m so happy with how these coconut shrimp turned out too. They’re incredibly crispy, flavorful, and healthy! They’re lightly pan fried in coconut oil, and take minutes to make! The sweet chili mango slaw is sooo delicious and pairs perfectly with the shrimp. Oh, and avocado mash to top it all off. You know I can’t make many things without adding avocado.

I wanted to give you guys an easy recipe, perfect for throwing in the slow cooker and forgetting about it. That has been the name of the game lately. When life gets busy, which it always is, I’m all about the slow cooker. I use it for making shredded chicken breasts to put on salads all week, pulled pork (my favorite thing in the world), soups, and meatballs like these! I’m obsessed with pesto lately too. I put it in my egg white scrambles, in frittatas, on salads, roasted veggie bowls, and pretty much anything I can think of. It adds so much flavor and brightness to everything! This salad will brighten the dreariest of winter days. It’s this time of year that I start craving more fresh, summery foods.
