Slow Cooker Pork Chile Verde

Slow Cooker Pork Chile Verde
Pork and Mexican food are two things I couldn’t live without. I know you know about my Mexican food obsession, but not sure about pork. Hence, the need to share this recipe today. I want to share more pork recipes on the blog, because it’s seriously my favorite meat and I have so many recipes I want you guys to try! Pulled pork is probably my favorite way to eat it, but bacon comes in a close second. (Sometimes first, depending on my mood).

Flourless Almond Brownies with Pomegranate Berry Compote

Flourless Almond Brownies with Pomegranate Berry Compote
I’ll take brownies over any other dessert nearly every time. I can’t express how much I love them. The chewy, fudgy texture and rich dark chocolate makes me weak in the knees. These brownies are making me fall in love even more (if that’s even possible). And they’re flourless! I used almond meal as the base and the texture it creates is so delicious. Seriously the fudgiest.

Lightened-Up BBQ Chicken Dip

Lightened-Up BBQ Chicken Dip
Would it be acceptable to only eat appetizers for every meal? Pretty sure I’d be the happiest person ever. In my family I’m known as “the picker.” I LOVE trying a bunch of different things when going out to restaurants, and entertaining with a bunch of apps (and eating off of my family members plates too shhh). I can’t help it! It’s just who I am. This recipe would be PERFECT for entertaining and this weekend’s big game!

Beef Burrito Bowls with Cilantro Lime Cauliflower Rice

Beef Burrito Bowls with Cilantro Lime Cauliflower Rice
I don’t know about you, but I could eat Mexican food for every meal for the rest of my life. It’s true. If that were to happen, I’d probably be as big as the couch I’m sitting on typing this post. These burrito bowls are a healthier version of your typical burrito bowls loaded with sour cream and other delicious things. I used Greek yogurt to keep things a little lighter, and cilantro lime cauliflower rice for a low carb option! It’s no secret I love cauliflower rice. It’s just so good and versatile. But don’t worry, there’s still cheese, because #balance.

Greek Yogurt Caesar Pesto Pasta Salad with Grilled Chicken and Arugula

Greek Yogurt Caesar Pesto Pasta Salad with Grilled Chicken and Arugula
Today’s recipe is all about simple and classic. Who doesn’t love pasta salad? Such a nostalgic favorite. Makes me think of summertime and cookouts and beautiful weather. All things I could totally go for right now. Plus, I used chickpea pasta! Which I’m obsessed with lately. If you’ve never had it, it’s made from chickpeas (obviously) and its a lot higher in protein and fiber, and lower in carbs than regular pasta. Love it!

Crispy Brussels and Shallot One Pot Pasta

Crispy Brussels and Shallot One Pot Pasta
Is it possible to overdose on brussels? I think I have this winter. I can’t even tell you how obsessed I’ve been with them. I put them in my egg scrambles for breakfast, in veggie bowls for lunch, shredded in salads, roasted in the oven with bacon, in pasta, roasted and dipped in hummus for a snack..you get the picture. This pasta is filled with my favorite way to consume brussels. Roasted and crispy. I also added some thinly sliced shallot, and the outcome was DELISH.
