Roasted Poblano Guacamole

Guacamole will always be one of my faves. I never get sick of it. I am usually a purist when it comes to my guac, but the roasted poblanos really add something special to the mix. And check out my awesome volcanic rock molcajete…so fun to play with your food.

Sausage, Manchego, and Balsamic Cabernet Onion Pizza

This isn’t your typical pizza. The dough is almost like a foccacia bread, and it doesn’t have a red sauce. I was in a pizza rut and came across this flatbread recipe and was intrigued by the combination of flavors.

This is an awesome recipe if you are looking for something different. The caramelized onions with cabernet and balsamic are ridiculous. I could eat them with a spoon and probably did.

Spicy Tuna Brown Rice Bowl with Sriracha Lime Mayo Drizzle and Sesame Soy Vinaigrette

I initially thought of doing a “deconstructed sushi roll” after one day making actual sushi rolls, well, attempting. I have successfully made sushi several times, but the other day, I was out of it and made regular rice, not the sticky sushi rice. So basically it didn’t work me.

So, I thought of making a brown rice bowl with seared tuna and yummy sriracha mayo and a sesame soy vinaigrette to kinda take place of the soy sauce to dip. So that’s what I did and I am super happy about it. I LOVE brown rice sushi, so I thought this would be a good take on it, and that way you can avoid having a sushi rolling mishap like me!

Cinnamon Banana Almond Butter Toast

Now, this isn’t really a recipe, just something I make for breakfast or a snack ALL the time. I do a ton of variations with different nut butters, like cashew or peanut butter, I sometimes use sunflower butter too. It is so fun to experiment with nut butters. I’ll also get a bunch of different grainy seedy breads. I love love love super grainy wheaty oaty breads.

IMG_0072And then I will slice bananas and place them on the toasted or grilled bread that is already slathered liberally with nut butter, and some times I will mash the banana into it if it’s super ripe.

Then, I will drizzle it with honey or agave syrup and cinnamon.

LOVE this. It’s probably also just because I love bread more than life itself and I could probably eat a loaf in one sitting..

Or maybe I have.

Make this! It is awesome for a quick breakfast running out the door.

Tandoori Style Chicken Wings with Cilantro Lime Yogurt Dipping Sauce

I absolutely LOVE ethnic food. That is an understatement. I always use big flavor and a lot of spices in my food. As you will see there are about a billion spices in just this recipe alone.

These wings aren’t hot spicy, they’re just spicy spicy…if that makes sense..

I’m obsessed with the yogurt dipping sauce with the flavorful spicy wings. Awesome combo.

IMG_0184I know you want these. And they’re not fried! More excuse to make them.

Double Chocolate Chip Cookies with Salted Caramel Drizzle

Now for something sweet. You will notice that the majority of my recipes will be savory, as that is my absolute favorite type of food. I do not have a big sweet tooth, but don’t get me wrong, I can definitely put away some sweets if I’m in the mood…..

Especially if there is salt in them….

IMG_0113Gotta love the drippy caramel and flakes of sea salt.

Kale and Green Lentil Soup with Spicy Roasted Sweet Potatoes

My inspiration for this soup came from how insanely cold it has been lately. I can’t even remember the last time it was this cold. I am not one to bundle up, and I’ve been wearing 4 layers a day, plus gloves and scarves and fun. This soup is so comforting and hearty and healthy too. I am a huge fan of kale and leafy greens in soups.

And can’t forget about the spicy sweet potatoes. SO good.
