Lightened Up Creamy Sundried Tomato Basil Chicken

Lightened Up Creamy Sundried Tomato Basil Chicken
I totally go through phases with chicken. I eat it pretty often. Almost too often..to a point where I get sick of it. Like everyone, I’m sure. Sometimes I want chicken several times a week, and others none. I eat it on salads for lunch, for quick dinners, and basically added to any dish for an easy, versatile┬áprotein. This recipe is perfect for those times when you’re sick of chicken, but still want something healthy and flavorful! Or, it could be a last minute holiday dinner. Festive colors, too!

I love pork in all forms. Bacon, pulled pork, pork tenderloin, pork chops, you name it. I love it alllll. It has so much flavor and it’s so versatile! I wanted to share this quick holiday recipe in case you’re in need of last minute meal ideas for this weekend. Usually you think of apples and pork together, but it’s SO good with the cranberries. They cook down in the oven with a little maple syrup, orange zest, and cloves. Super delicious.

I have the perfect wake-up for this lovely holiday week Monday morning! Salted peanut butter cookie lattes. Say it with me.

There’s nothing like a huge cheeseboard with tonnnns of amazing stuff loaded on it..am I right?! I’m pretty sure I could have this for dinner nearly every night and be the happiest girl ever. Dark Chocolate Peppermint Coconut Oil Cookies

img_2952
I’m finally getting around to posting a Christmas cookie recipe on the site! I’ve been wanting to post them since I made a Halloween version on Instagram. I LOVE these cookies. They don’t require a mixer or any chilling time, which are huge bonuses for me. I’m too impatient to wait for cookie dough to chill! Although, it is sometimes necessary. Not with these beauties though. You’re minutes away from super delicious dark chocolate peppermint cookies that taste like the holidays.

Crispy Brussels Kale Salad with Bacon Maple Dressing and Toasted Hazelnuts

Hearty winter salads are the best! It’s officially SO COLD here in Maryland and I’m not happy about it. I’m such a warm weather girl at heart, so the winter isn’t exactly my favorite time. I absolutely love the holidays and this time of year, but come January 1st, I’m ready for shorts again.

This salad is for those times where you want something healthy, but also comforting. It also hold up really well in the fridge because kale is so hearty!

I’m having a moment with vanilla bean..as you may have seen earlier this week!

Whole Wheat Cranberry Orange Pistachio Muffins with Vanilla Bean Glaze

img_2082
The title of these muffins is kind of ridiculous, I know. I couldn’t leave anything out! Every ingredient in these muffins contributes to their amazingness. They taste like the holidays. Tart cranberries, fragrant orange, and crunchy pistachios mix together perfectly. I used whole wheat flour, and they’re sweetened with just maple syrup! So, they are a bit lightened up as well! I had to top the muffins with a vanilla bean glaze, because vanilla bean makes everything wonderful and warm.

One Pot Chili Mac and Cheese

img_2385
This might be one of my favorite recipes to date. I CANNOT get over how good it is! I know it may not seem like the healthiest dish, but it is lightened up. There only six ounces of cheese in the whole recipe, and you get a good six to eight portions out of it. It makes a BIG, cozy pot that you can enjoy all week long in this chilly weather. Also, who doesn’t love a one pot meal?! Chili + mac and cheese = a match made in heaven.
