Chilaquiles have to be in my top five favorite brunch foods. Actually, make that top five favorite foods EVER. If you’ve never had them, it’s basically fried tortillas which are then cooked in a chipotle/Mexican spiced tomato-y sauce, layered with cheese, and topped with all of the delicious things. Including fried eggs, and in my case, avocado. And we all know how I feel about those two.

Pesto Mushroom Sweet Potato Spinach Frittata
This is something I make nearly EVERY single week for meal prep. I love it SO much. I love getting in a bunch of veggies, greens, protein, good carbs, and healthy fats after my early morning workouts, and this provides just that. I used to sauté a bunch of vegetables and egg whites in the morning and make an egg/veggie scramble, but these days, I’m short on time in the mornings. This frittata completely solves that issue. I make it on Sundays, portion it out, and keep it in the fridge. I top it with avocado sometimes, or serve it with a piece of avocado or peanut butter toast if I need extra fuel. Which is often.

The title of these muffins is kind of ridiculous, I know. I couldn’t leave anything out! Every ingredient in these muffins contributes to their amazingness. They taste like the holidays. Tart cranberries, fragrant orange, and crunchy pistachios mix together perfectly. I used whole wheat flour, and they’re sweetened with just maple syrup! So, they are a bit lightened up as well! I had to top the muffins with a vanilla bean glaze, because vanilla bean makes everything wonderful and warm.

Thanksgiving Leftovers Everything Bagel Breakfast Sandwich

How was everyone’s Thanksgiving/Thanksgiving weekend? I hope it was filled with loved ones, tons of delicious food of course, relaxation, and maybe some shopping! Mine sure was. Now it’s just less than a month until Christmas, which is pretty insane, but it’s hands down my favorite time of year. I love all the time with family, gatherings with friends, cookie swaps, Christmas music, food, and just that magical feeling in the air..it makes me feel like a kid!

So back to this sandwich. Omg. Thanksgiving leftovers are the BEST. I basically stuffed an everything bagel (the best kind of bagel) with mashed potatoes, stuffing, turkey, and two runny eggs. I also slathered the bagel with cream cheese mixed with cranberry sauce..so so good! The savory and sweet combo in this is to die for. I hope you aren’t sick of leftovers yet…

Whole Wheat Baked Chai Donuts + Homemade Iced Chai Lattes

This is a total Friday/end of the week celebration/weekend treat. I lightened the donuts up just a bit by using whole wheat pastry flour and coconut oil, and the chai lattes are sweetened with pure maple syrup. So, they’re not a complete sugar bomb, but definitely a treat.

I don’t know about you, but I love chai. I find myself craving it more as the chillier weather hits. It’s such a comforting, warm blend of spices. My mom however, is an avid chai tea drinker. Not the chai lattes you might be thinking of, but black chai tea. She’s been drinking it every day for as long as I can remember.
