I wanted to give you guys an easy recipe, perfect for throwing in the slow cooker and forgetting about it. That has been the name of the game lately. When life gets busy, which it always is, I’m all about the slow cooker. I use it for making shredded chicken breasts to put on salads all week, pulled pork (my favorite thing in the world), soups, and meatballs like these! I’m obsessed with pesto lately too. I put it in my egg white scrambles, in frittatas, on salads, roasted veggie bowls, and pretty much anything I can think of. It adds so much flavor and brightness to everything! And tons of garlic flavor of course.

Is it possible to overdose on brussels? I think I have this winter. I can’t even tell you how obsessed I’ve been with them. I put them in my egg scrambles for breakfast, in veggie bowls for lunch, shredded in salads, roasted in the oven with bacon, in pasta, roasted and dipped in hummus for a snack..you get the picture. This pasta is filled with my favorite way to consume brussels. Roasted and crispy. I also added some thinly sliced shallot, and the outcome was DELISH.

I swear I could eat Mexican food for every darn meal and be completely happy. I’m pretty sure my waistline wouldn’t appreciate that though. So, these are a lightened up version of loaded nachos, made with crispy sweet potato “chips!” They’re AMAZING. And somehow I didn’t even miss the chips! The sweetness of the potatoes mixed with the spicy/smoky beef and chipotle sauce is perfection. I hope you’re not sick of all my sweet potato-centric recipes lately..I just love them so much!

Paleo Chicken Cauliflower Fried Rice

I’m LOVING this recipe lately. It’s so light and delicious, and much healthier than takeout fried rice. Plus, I used cauliflower rice instead of regular rice, so it’s paleo and low carb! I’m not paleo, but I do tend to eat that way a lot of the time. I feel so much better when I’m not eating a lot of grains. Protein and veggies is the way to go! If you’re not paleo, you can certainly use regular rice in this recipe. It’s great for meal prep and for work lunches too.
