Chilaquiles have to be in my top five favorite brunch foods. Actually, make that top five favorite foods EVER. If you’ve never had them, it’s basically fried tortillas which are then cooked in a chipotle/Mexican spiced tomato-y sauce, layered with cheese, and topped with all of the delicious things. Including fried eggs, and in my case, avocado. And we all know how I feel about those two.
I can’t tell you how much I LOVE fried plantains (a.k.a. tostones). There’s a little hole in the wall Cuban place near me that has the BEST I’ve ever had. They pound the plantains super thin before frying them and serve the tostones with a garlicky mojo dipping sauce. It’s pretty much food heaven.
I was inspired to make my own and turn it into a savory breakfast situation! There’s scrambled eggs, plantains fried in coconut oil (twice!) to make them super crispy, a quick pico de gallo, and avocado chimichurri! I want to put it on everything.
Brunch food is one of the best things in the world. Can we all agree? There are soooo many wonderful ways to do brunch, but my favorite has to be of the savory variety. I do love pancakes and waffles, and they certainly have their time and place, but I am a savory girl all the way. Give me all the breakfast tacos, chilaquiles, huevos rancheros, Mexican inspired brunch dishes, eggs any & every way, and fries/chips, of course. Any time that I can have fries before noon is a major win in my book.
