Mexican Street Corn Chilaquiles
Chilaquiles have to be in my top five favorite brunch foods. Actually, make that top five favorite foods EVER. If you’ve never had them, it’s basically fried tortillas which are then cooked in a chipotle/Mexican spiced tomato-y sauce, layered with cheese, and topped with all of the delicious things. Including fried eggs, and in my case, avocado. And we all know how I feel about those two.

These may just be the BEST tacos I’ve ever made. And I’ve made a TON of tacos. I’m so happy with how these coconut shrimp turned out too. They’re incredibly crispy, flavorful, and healthy! They’re lightly pan fried in coconut oil, and take minutes to make! The sweet chili mango slaw is sooo delicious and pairs perfectly with the shrimp. Oh, and avocado mash to top it all off. You know I can’t make many things without adding avocado.

This salad will brighten the dreariest of winter days. It’s this time of year that I start craving more fresh, summery foods. I can just sense the days getting a litttttle bit longer, and having the sun rise a little earlier has been wonderful. I also can’t stop with the blood oranges. They’re so stunning, obviously, but their flavor is out of this world. They’re not as “orangey” as a typical navel orange..almost more fruit punchy? Or something? Don’t quote me on that. I don’t know about you, but I could eat Mexican food for every meal for the rest of my life. It’s true. If that were to happen, I’d probably be as big as the couch I’m sitting on typing this post. These burrito bowls are a healthier version of your typical burrito bowls loaded with sour cream and other delicious things. I used Greek yogurt to keep things a little lighter, and cilantro lime cauliflower rice for a low carb option! It’s no secret I love cauliflower rice. It’s just so good and versatile. But don’t worry, there’s still cheese, because #balance.
