Zucchini Noodle Carbonara
I don’t often make real deal carbonara. But when I do, it’s such a treat. But sometimes, you just wanna have a pasta dish that’s on the healthier side, but feels indulgent. This is for you my friends. And it’s SO easy!

Thai Veggie Chickpea Stuffed Sweet Potatoes

Thai Veggie Chickpea Stuffed Sweet Potatoes
I’m SO into everything sweet potato lately. And plant-based meals. I had been eating a lot of meat for awhile, mostly chicken and pork, but some beef too, and I realized how much I miss my beans and legumes! Such a great, cheaper way to get protein. And delicious of course. Pretty sure I’d eat anything if it was covered in peanut sauce. I mean, what is better?!

Roasted Cauliflower Kale Salad with Dried Cherries, Walnuts, and Feta
I NEED to add roasted veggies to my salads more often. This was SO delicious. First of all, any deeply roasted veggie is my best friend. And then added to a salad?! My new favorite thing. I’m one of those weirdos that loves salads and craves veggies more than anything. It’s true. The combo of flavors in here is insane. #nosadsalads.

Avocado Toast with Beet Noodles, Garlic Swiss Chard, Bacon, and Feta

Avocado Toast with Beet Noodles, Garlic Swiss Chard, Bacon, and Feta
You can never have too many versions of avocado toast. As someone who eats it ALL the time, I’m talking breakfast, lunch, dinner, snack…it never gets old. I’m usually an avocado toast purist. Grainy, crusty bread, buttery smashed avo, a little sea salt, and that’s it. And almost always a runny egg or egg whites, depending on my mood. Sometimes sautéed spinach or veggies too. I don’t discriminate! It’s all delicious.

Slow Cooker Pesto Turkey Meatballs

Slow Cooker Pesto Turkey Meatballs
I wanted to give you guys an easy recipe, perfect for throwing in the slow cooker and forgetting about it. That has been the name of the game lately. When life gets busy, which it always is, I’m all about the slow cooker. I use it for making shredded chicken breasts to put on salads all week, pulled pork (my favorite thing in the world), soups, and meatballs like these! I’m obsessed with pesto lately too. I put it in my egg white scrambles, in frittatas, on salads, roasted veggie bowls, and pretty much anything I can think of. It adds so much flavor and brightness to everything! And tons of garlic flavor of course.

Buffalo Chicken Chili

Buffalo Chicken Chili
Buffalo chicken chili! It’s about time I turned my favorite party dip into something else. To go along with my lightened-up buffalo chicken mac and cheese of course. Easily in my top ten favorite recipes on the blog. Buffalo flavored things are just TOO good! Who agrees?! It has that addicting factor. Like I can’t get enough/just ate an entire family sized bag of chips kind of good..you know what I mean. I know you do.

Honey Citrus Chicken, Blood Orange, and Avocado Chopped Salad

Honey Citrus Chicken, Blood Orange, and Avocado Chopped Salad
This salad will brighten the dreariest of winter days. It’s this time of year that I start craving more fresh, summery foods. I can just sense the days getting a litttttle bit longer, and having the sun rise a little earlier has been wonderful. I also can’t stop with the blood oranges. They’re so stunning, obviously, but their flavor is out of this world. They’re not as “orangey” as a typical navel orange..almost more fruit punchy? Or something? Don’t quote me on that. If you haven’t had them, you’re missing out.

Salmon with Warm Shallot Tomato Basil Salsa

Salmon with Warm Shallot Tomato Basil Salsa
I’m always looking for new ways to prepare salmon. It’s one of my favorite things to make for a healthy dinner during the week. In these winter months where it’s too freezing cold to grill, I don’t always feel like having the same ol’ broiled or pan fried salmon. Also, this warm tomato salsa is SO delicious and I want to put it on EVERYTHING.
