You can never have too many versions of avocado toast. As someone who eats it ALL the time, I’m talking breakfast, lunch, dinner, snack…it never gets old. I’m usually an avocado toast purist. Grainy, crusty bread, buttery smashed avo, a little sea salt, and that’s it. And almost always a runny egg or egg whites, depending on my mood. Sometimes sautéed spinach or veggies too. I don’t discriminate! It’s all delicious.

This salad will brighten the dreariest of winter days. It’s this time of year that I start craving more fresh, summery foods. I can just sense the days getting a litttttle bit longer, and having the sun rise a little earlier has been wonderful. I also can’t stop with the blood oranges. They’re so stunning, obviously, but their flavor is out of this world. They’re not as “orangey” as a typical navel orange..almost more fruit punchy? Or something? Don’t quote me on that. Today’s recipe is all about simple and classic. Who doesn’t love pasta salad? Such a nostalgic favorite. Makes me think of summertime and cookouts and beautiful weather. All things I could totally go for right now. Plus, I used chickpea pasta! Which I’m obsessed with lately. If you’ve never had it, it’s made from chickpeas (obviously) and its a lot higher in protein and fiber, and lower in carbs than regular pasta. Love it!

The quinoa is packed with protein for staying power, and the roasted squash makes it more substantial too. The pecans add much needed crunch, and the pear and cranberry add sweetness!

5 Ingredient Fig and Smoked Gouda Flatbreads

Words cannot describe my love for these flatbreads. They’re SO incredibly simple, and they highlight some of my favorite flavors in the most beautiful way. First of all, there are only five ingredients, and they take 15 minutes or less to make. Secondly, FIGS. Why can’t the season last longer?! They’re soooo amazing and that seedy texture gets me every time. Also, cheese. No explanation needed.

BLT Chicken Salad Lettuce Wraps

One of my absolute favorite things to make for lunch and/or meal prep for the week is lightened-up chicken salad that’s made with Greek yogurt. There’s no need for mayo and it’s soooo much healthier. You really can’t tell a difference. I actually prefer it. I play around with different variations, but this one was inspired by one of my favorite things: BLT’s. In the past, I’ve made a BLT grilled cheese as well as BLT Salmon Burgers. I can’t help it. Such an amazing combo. Salty bacon, beautiful juicy tomatoes, crisp lettuce, toasty bread, and usually avocado..because I’m clearly in love with it, if you haven’t noticed.

I thought it was time for another version of one of my favorite sandwiches, and this is it! You could certainly eat this on toasted bread, but I love it in the lettuce cups.
