Mexican Street Corn Chilaquiles
Chilaquiles have to be in my top five favorite brunch foods. Actually, make that top five favorite foods EVER. If you’ve never had them, it’s basically fried tortillas which are then cooked in a chipotle/Mexican spiced tomato-y sauce, layered with cheese, and topped with all of the delicious things. Including fried eggs, and in my case, avocado. And we all know how I feel about those two.

These may just be the BEST tacos I’ve ever made. And I’ve made a TON of tacos. I’m so happy with how these coconut shrimp turned out too. They’re incredibly crispy, flavorful, and healthy! They’re lightly pan fried in coconut oil, and take minutes to make! The sweet chili mango slaw is sooo delicious and pairs perfectly with the shrimp. Oh, and avocado mash to top it all off. You know I can’t make many things without adding avocado.

Mexican food will forever be in my top, well, if not my FAVORITE type of food. I hate saying favorite, because I have so many “favorites”..cue eye roll. I really just LOVE so many things. I’m serious about the Mexican food though. I could eat tacos, taco salads, fajitas, enchiladas, chilaquiles, huevos rancheros, chips and guac, and margaritas for seriously every meal and never get sick of them. This meal is a healthy version of one of my favorite things..a taco salad!

I know one way to make Monday better…these tostadas. Crispy corn tortillas, freshly fried in a skillet and sprinkled with flaky sea salt, the most refreshing corn and black bean salsa with lime and cilantro, smashed avocado, a chipotle drizzle, and more sliced avocado on top…because we can never have enough.
