Hearty winter salads are the best! It’s officially SO COLD here in Maryland and I’m not happy about it. I’m such a warm weather girl at heart, so the winter isn’t exactly my favorite time. I absolutely love the holidays and this time of year, but come January 1st, I’m ready for shorts again.

Crispy Plantain & Egg Breakfast Bowls with Avocado Chimichurri

I can’t tell you how much I LOVE fried plantains (a.k.a. tostones). There’s a little hole in the wall Cuban place near me that has the BEST I’ve ever had. They pound the plantains super thin before frying them and serve the tostones with a garlicky mojo dipping sauce. It’s pretty much food heaven.

I was inspired to make my own and turn it into a savory breakfast situation! There’s scrambled eggs, plantains fried in coconut oil (twice!) to make them super crispy, a quick pico de gallo, and avocado chimichurri! I want to put it on everything.

Balsamic Chicken, Roasted Beet, and Bacon Kale Salad

Say hello to my new favorite hearty fall salad! The combination of flavors here is INSANE. Garlicky balsamic glazed chicken with a little fresh thyme, sweet roasted beets (they’re like candy to me), and bacon, of course. All topped on a bed of kale massaged in a mustard maple vinaigrette! So much flavor and super healthy too!
