Today’s recipe is all about simple and classic. Who doesn’t love pasta salad? Such a nostalgic favorite. Makes me think of summertime and cookouts and beautiful weather. All things I could totally go for right now. Plus, I used chickpea pasta! Which I’m obsessed with lately. If you’ve never had it, it’s made from chickpeas (obviously) and its a lot higher in protein and fiber, and lower in carbs than regular pasta. Love it!

Is it possible to overdose on brussels? I think I have this winter. I can’t even tell you how obsessed I’ve been with them. I put them in my egg scrambles for breakfast, in veggie bowls for lunch, shredded in salads, roasted in the oven with bacon, in pasta, roasted and dipped in hummus for a snack..you get the picture. This pasta is filled with my favorite way to consume brussels. Roasted and crispy. I also added some thinly sliced shallot, and the outcome was DELISH.

Crockpot Short Rib Sauce with Butternut Squash Noodles

There’s something so comforting and special about short ribs. They remind me of chilly weather, cozy fires, and the holidays. They’re one of those meals (at least for me) that you don’t cook often..they’re usually reserved for special occasions. I’m here to change that!

This sauce is SO easy and full of flavor. It feels fancy, but it’s as simple as throwing everything into a pot. You just quickly sear the short ribs, and throw all of the ingredients into the crockpot overnight. And voilĂ ! A comforting meal, with next to no effort. Waking up to the smell of short ribs simmering in tomato sauce, herbs, and garlic isn’t too bad either.

One Pot Lightened Up Creamy Sundried Tomato and Bacon Pasta

I have a new obsession with one pot meals. It started with this insaaaanely flavorful and EASY pasta. It’s so creamy and it’s made with no cream or half and half..just a little milk and a small amount of parm in the whole dish.

I’ve been all about easy and efficient lately, trying to get most of my meal prep done on the weekend so I can be less stressed and enjoy the week more. This is perfect for those days when you need an easy and comforting meal that comes together in minutes.
