I have a super easy and healthy weeknight meal for you guys! This one is SO delicious and full of tons of veggies and protein. It’s fantastic for meal prep, and keeps super well in the fridge. Plus, I can’t get enough Mexican food. We all know that by now.
Hi! How was your weekend? Mine was super relaxing and filled with meal prep, cooking for clients, and going on walks because this fall weather is absolute perfection. I never want it to leave. As it gets chiller, I thought this paleo sweet potato turkey chili would be perfect for our #mealprepmonday theme! It definitely has kick, so it’ll warm your insides. I’m usually a fan of beans in my chili, but with this one I left them out. I really liked it as is, and there’s enough protein from the turkey. But, feel free to add some black beans or quinoa if you want it to be a little heartier!
