Cranberry Pecan Caramelized Onion Cheeseball

This cranberry caramelized onion cheeseball is so flavorful, super easy to make, and so festive! It's such a crowd pleaser and it's great to entertain with!

Ingredients

  • 2 tablespoons unsalted butter
  • 1 medium sweet onion, very thinly sliced
  • 8 ounces cream cheese, softened to room temperature
  • 4 ounces mascarpone cheese, softened to room temperature
  • 1 1/2 cups freshly grated white cheddar cheese
  • 1 cup pecans, chopped
  • 3/4 cup dried cranberries, chopped into smaller pieces
  • salt and pepper

Instructions

  1. Heat a skillet over medium-high heat and add the butter. Once melted, add the onions and sauté, stirring frequently for 25-30 minutes, or until deeply golden and caramelized. They will be almost a jam-like consistency.

  2. While the onions are caramelizing, heat a skillet over medium high and add the pecans. Toast for 3-4 minutes, stirring, watching very carefully as they can burn quickly. Remove from heat.

  3. Add the cream cheese, mascarpone, the caramelized onions, white cheddar, half of the toasted pecans, and a pinch of salt and pepper to a medium mixing bowl. Beat the mixture with electric beaters until combined.

  4. Add remaining pecans and cranberries to a plate and stir with your fingers to combine.

  5. Form cheese mixture into a ball using your hands, and gently roll in the pecans and cranberries to adhere. Wrap in plastic wrap and refrigerate for at least 2 hours or up to overnight. I like to let mine sit at room temperature for an hour or so before serving. Serve with your favorite crackers, chips, and sliced apples!
