Asian Sesame Slaw Salad with Chicken and Cashew Ginger Dressing

This super crunchy slaw salad is filled with fresh veggies, chicken, and a super creamy and delicious cashew ginger sesame garlic dressing!

Ingredients

For the salad

  • 6 cups slaw mix (I used a cabbage, carrot, brussels mix)
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 2 cups shredded chicken
  • 3 scallions, thinly sliced
  • 1/2 cup chopped cilantro, plus extra for serving
  • 1/2 cup sesame honey cashews, plus extra for serving (I buy mine at Trader Joe's)

For the cashew ginger dressing

  • juice of 1 lime
  • 2 tablespoons rice wine vinegar
  • 2 teaspoons soy sauce
  • 2 teaspoons sesame oil
  • 1 tablespoon honey
  • 1/3 cup creamy cashew butter
  • 1 clove garlic, minced
  • 2 teaspoons freshly grated ginger
  • 2 tablespoons hot water

Instructions

  1. Combine slaw mix, red bell peppers, yellow bell peppers, shredded chicken, scallions, cilantro, and sesame honey cashews in a large bowl. Toss to combine.

  2. Make the dressing. In a medium bowl, whisk together the lime juice, rice wine vinegar, soy sauce, sesame oil, honey, cashew butter, garlic, and ginger. Whisk to combine. Add the hot water and whisk again until very smooth and creamy.

  3. Pour dressing over salad and toss to coat. Serve with extra chopped cilantro and cashews.
