Ingredients

  • 1 pound salmon fillet
  • 2 oranges, tested and juiced
  • 1 teaspoon dijon mustard
  • 1 tablespoon maple syrup
  • 1/2 teaspoon dried tarragon
  • 1/2 teaspoon dried rosemary
  • 1/8 teaspoon cinnamon
  • 1/8 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1-2 tablespoons chopped fresh tarragon

Instructions

  1. In a small saucepan, combine the orange juice and zest, dijon mustard, maple syrup, dried tarragon, dried rosemary, cinnamon, paprika, salt, and pepper. Bring to a boil and then reduce to medium heat and let simmer for 4-5 minutes or until reduced and thickened.

  2. Preheat your oven's broiler to high. Position rack in the upper third of the oven. Line a baking sheet with foil and place the salmon on top. Reserve ¼ of the glaze in a small bowl.

  3. Brush salmon with the remaining ¾ of the glaze and broil for 6-7 minutes or until salmon is cooked through (this could take more or less time depending on the thickness of your fillet).

  4. Once salmon is finished, drizzle with the reserved glaze and sprinkle with fresh tarragon. Serve!
