Grilled Pineapple Bacon Chicken Burgers with BBQ Mayo

Ingredients

  • 1 pound ground chicken breast
  • 4 slices bacon, cooked and chopped
  • 2 scallions, thinly sliced
  • 1 clove garlic, minced
  • 2 tablespoons soy sauce
  • 1/4 teaspoon pepper
  • 1 tablespoon olive oil
  • 4 slices pineapple, cored, cut ¼'' thick
  • 1/4 cup mayonnaise
  • 2 tablespoons BBQ sauce
  • butter lettuce for serving
  • your favorite hamburger buns

Instructions

  1. Preheat your outdoor grill or grill pan to medium-high heat. Grill the pineapple slices for 2-3 minutes per side, or until grill marks appear. Set aside.

  2. Combine the ground chicken, bacon, scallions, garlic, soy sauce, and pepper in a medium bowl. Mix until combined. Form into 4 equal patties.

  3. Heat a large nonstick skillet to medium-high heat and add the olive oil. Add the burgers and cook for 3-4 minutes per side or until golden and cooked through.

  4. In a small bowl, combine the BBQ sauce and mayonnaise and stir until smooth. To assemble burgers, slather each side of the bun in BBQ mayo, then add butter lettuce, the burger, a grilled pineapple slice, and an extra drizzle of BBQ mayo!
