Blackberry Cucumber Gin Spritzers

These blackberry cucumber gin spritzers are such a refreshing drink for summer! The flavors of mint, lime, and blackberries pair beautifully together.

Ingredients

For the cocktail

  • a small handful of blackberries + extra for garnish
  • a few mint leaves + extra for garnish
  • 1 1/2 ounces gin
  • 1 1/2 ounces blackberry simple syrup
  • 1 ounce freshly squeezed lime juice
  • a few splashes of lemon lime soda
  • spiralized or sliced cucumbers for garnish
  • lime wedges for garnish
  • crushed ice

For the blackberry simple syrup

  • 1 cup blackberries
  • 1 cup sugar
  • 1 cup water

Instructions

  1. Make the simple syrup. Combine the blackberries, sugar, and water in a medium saucepan and bring to a boil. Boil for 2 minutes and then remove from heat and let cool.

  2. To make the cocktail, add crushed ice to a glass. Add a few blackberries and a few mint leaves and muddle until they have released their juices. To a cocktail shaker, add the gin, simple syrup, and lime juice. Shake for 30 seconds. Pour into the glass and top off with the lemon lime soda (a few good splashes). Garnish with a squeeze of lime, spiralized cucumbers, blackberries, and mint leaves. Drink up!

*Makes a lot of simple syrup! Keeps well in the fridge for up to two weeks!
