These healthy truffles are made with dates, cashews, walnuts, almond butter, chia seeds, hemp seeds, and cinnamon! They are coated in dark chocolate and sprinkled with dried rosebuds. Perfect for Valentine's Day or any day you want to treat yourself!
In a food processor, combine the cashews, walnuts, salt, cinnamon, chia seeds, and hemp seeds and pulse until very finely ground. Add the dates, almond butter, and vanilla and process until mixture forms a "dough". This might take several minutes, and you might have to stop and stir in the process to get things moving.
Roll mixture into 20 balls and place on a parchment lined plate or baking dish. Freeze balls for 1 hour.
Once balls are just about finished, place chopped chocolate in a microwave safe bowl and microwave in 30 second increments or until melted, stirring in between. Mine took about 1 1/2 minutes. Add the coconut oil and stir until smooth.
Using a fork, carefully coat the balls in the chocolate, letting the excess drain off through the fork. Quickly sprinkle with the rosebuds (the chocolate will set up fast because the balls are cold!) Repeat until all truffles are coated. Enjoy! These keep great in the fridge for up to 2 weeks!
*Instead of the dried rosebuds, you can decorate these with sprinkles, chopped nuts, granola, or whatever you like!
