This Roasted Cauliflower Kale Salad with Dried Cherries, Walnuts, and Feta is a hearty, super flavorful salad filled with tons of amazing texture. It's a super satisfying vegetarian meal, but it's also a fantastic base for whatever protein you want to add! The roasted cauliflower mixed with all of the other cold, crunchy ingredients is just amazing!
Preheat the oven to 425℉. Line a baking sheet with parchment and place cauliflower on the baking sheet. Drizzle with one tablespoon of the olive oil and season with a few pinches of salt and pepper. Roast for 25-30 minutes until deeply golden and caramelized.
While the cauliflower is roasting, make the dressing. Combine lemon juice, dijon, honey, garlic, salt, and pepper in a small bowl and whisk to combine. Add the remaining 2 tablespoons of olive oil and whisk again to combine.
Add kale to a large mixing bowl and add half of the dressing, along with a generous pinch of salt and freshly cracked black pepper. Massage the dressing into the kale for a minute or so until the kale reduces in volume and gets softer.
To assemble the salad, add the roasted cauliflower, red onion, cherries, walnuts and feta to the kale and toss. Add the remaining dressing and toss again. Season with salt and pepper to taste and serve!
