Salmon with Warm Shallot Tomato Basil Salsa

This delicious salmon is made in 30 minutes and it's topped with a warm shallot tomato basil salsa with tons of flavor! It's made with a little balsamic vinegar and fresh basil and makes a great, light dinner served with a salad or rice!

Ingredients

For the salsa

  • 3 cups cherry tomatoes, halved
  • 3/4 cup thinly sliced shallots
  • 4 cloves garlic, finely chopped
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 tablespoons balsamic vinegar
  • 1/4 cup chopped fresh basil, plus extra for serving
  • salt and pepper to taste

For the salmon

  • 1-1 1/2 pounds salmon filet
  • drizzle of olive oil
  • 1 teaspoon dried oregano
  • zest of half a lemon
  • salt and pepper

Instructions

  1. Heat a skillet to medium-high heat and add olive oil and butter. Add garlic and shallots and sauté for 2 minutes until softened and fragrant. Add the tomatoes, a pinch of salt and pepper, and cook for 8 minutes, stirring frequently, until tomatoes have broken down. Add the balsamic and cook for an additional two minutes. Once finished, stir in chopped basil.

  2. To make the salmon, preheat broiler to high. Place salmon on a parchment lined baking sheet and drizzle with olive oil. Sprinkle with oregano, lemon zest, and a couple pinches of salt and pepper.

  3. Broil for 6-8 minutes or until salmon is cooked through. This will vary depending on the thickness of your filet. Once finished, serve with the warm salsa and extra chopped basil!
