Chipotle Turkey Sweet Potato Chili

Ingredients

  • 3 large sweet potatoes, peeled and diced into 1/2'' chunks
  • 1 large yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon coconut oil
  • 1 lb. ground turkey breast
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 2 chipotle peppers, chopped (from a can of chipotles in adobo)
  • 2 tablespoons adobo sauce, from the can of chipotles in adobo
  • 2 teaspoons cocoa powder
  • 5-6 cups chicken broth (start with 5, and add more if needed)
  • cilantro for garnish

Instructions

  1. Heat a large pot or dutch oven to medium/high heat. Add coconut oil. Add onion and garlic and sauté for 2-3 minutes, stirring occasionally.
  2. Add turkey, chili powder, cumin, chipotle peppers, adobo sauce, and cocoa powder. Cook for 5-7 minutes until turkey is cooked through, breaking it up into small pieces with your spatula. Add sweet potatoes and broth and bring to a boil.

  3. Once boiling, reduce to medium heat and simmer for 20 minutes or until potatoes are tender. Remove from heat.
  4. Add about half of the chili to a blender and blend until smooth. Add back into the pot and stir to combine. Be very careful when blending hot liquids because your blender can explode! To be safe, you could cool the soup a little bit and then blend. Or, you could use an immersion blender. Top with cilantro and any other toppings you like!
