Preheat oven to 350℉. Put brie in a medium cast iron skillet or glass baking dish. Sprinkle top evenly with brown sugar and drizzle with honey. Bake for 12-15 minutes or until soft and bubbly, and the cheese starts to ooze out from the sides. Let rest for 5 minutes. Top with granola and an extra drizzle of honey if desired.
