Warm Chia Pudding with Caramelized Bananas

This Warm Chia Pudding with Caramelized Bananas is so cozy and delicious! It's topped with warm bananas sautéed in a little coconut oil, maple syrup, and cinnamon, and it tastes like bananas foster! Top it with berries and almond butter for a complete, healthy breakfast or snack!

Ingredients

For the chia pudding

  • 2 cups unsweetened vanilla almond milk
  • 1/2 cup chia seeds
  • 1 teaspoon vanilla extract
  • pinch of salt
  • berries for topping
  • almond butter for topping
  • cinnamon for topping
  • pure maple syrup for topping, optional

For the caramelized bananas

  • 2 teaspoons coconut oil
  • 2 medium bananas, sliced
  • 1 tablespoon pure maple syrup
  • pinch of salt
  • dash of cinnamon

Instructions

  1. Bring the almond milk and chia seeds to a boil. Once boiling, reduce heat to medium/medium-high and simmer for 2-3 minutes or until chia pudding becomes thick and creamy. Add the vanilla and salt and stir to combine.

  2. Meanwhile, heat a nonstick skillet over medium/medium-high heat and add the coconut oil. Add the bananas and cook for 1-2 minutes per side, or until they become golden and caramelized. Add the maple syrup, salt, and cinnamon and cook for an additional 1-2 minutes or until extra caramelized and golden.

  3. To serve, top the warm chia pudding with a handful of berries, the caramelized bananas, a scoop of almond butter, a sprinkle of cinnamon, and a drizzle of maple syrup. Serve immediately!
