Preheat oven to 350℉. In a medium bowl, whisk together the almond meal, coconut flour, cacao powder, salt, and baking soda. Add eggs, coconut oil, maple syrup, and vanilla, and whisk until thoroughly incorporated and no lumps remain. Don't overmix. (Chocolate batter).
In another medium bowl, whisk together the almond meal, coconut flour, salt, and baking soda. Add eggs, coconut oil, maple syrup, and vanilla, and whisk until thoroughly incorporated and no lumps remain. Don't overmix. (Vanilla batter). Spray a donut pan with nonstick spray or coconut oil. Fill each well 1/2 way with batter.
*You can also swirl the 2 batters together while spooning in the donut pan to create a marbled donut!
*To torch the marshmallow, you can use a kitchen torch, or you can stick the marshmallows on the donut with a little of the glaze, and place under the broiler to toast, watching very carefully. Once toasted, remove from the oven, drizzle with melted dark chocolate, and add crushed graham crackers
*You don't have to make both batters, you can do just chocolate or just vanilla if you'd like. Each makes about 8 donuts.
