Donut Party! (paleo, gf, + grain-free)

Ingredients

  • For the CHOCOLATE donuts:
  • 2 T. almond meal
  • 1/4 c. coconut flour
  • 1/4 c. cacao powder (can also use unsweetened cocoa powder)
  • 1/4 tsp. salt
  • 1/4 tsp. baking soda
  • 4 large eggs
  • 1/2 c. coconut oil, melted and cooled
  • 3 T. maple syrup
  • 1 tsp. vanilla
  • For the VANILLA donuts:
  • 1/4 c. almond meal
  • 1/4 c. coconut flour
  • 1/4 tsp. salt
  • 1/4 tsp. baking soda
  • 4 large eggs
  • 1/2 c. coconut oil, melted and cooled
  • 3 T. maple syrup
  • 2 tsp. vanilla
  • SIMPLE GLAZE to help toppings stick:
  • 1 c. confectioners sugar
  • 2 T. almond milk + more if too thick
  • TOPPING IDEAS:
  • For a s'mores donut: crushed graham crackers, drizzled dark chocolate, torched marshmallow
  • Fruity pebbles
  • Assorted sprinkles
  • 3 oz. melted dark chocolate with a teaspoon of coconut oil added to help with hardening
  • Cinnamon sugar
  • Chocolate covered chia seeds
  • Chocolate covered hemp seeds
  • Whatever your heart desires!

Instructions

  1. Preheat oven to 350℉. In a medium bowl, whisk together the almond meal, coconut flour, cacao powder, salt, and baking soda. Add eggs, coconut oil, maple syrup, and vanilla, and whisk until thoroughly incorporated and no lumps remain. Don't overmix. (Chocolate batter).

  2. In another medium bowl, whisk together the almond meal, coconut flour, salt, and baking soda. Add eggs, coconut oil, maple syrup, and vanilla, and whisk until thoroughly incorporated and no lumps remain. Don't overmix. (Vanilla batter). Spray a donut pan with nonstick spray or coconut oil. Fill each well 1/2 way with batter.

  3. Bake for 15-18 minutes until a toothpick inserted comes out clean. Let cool for several minutes, then remove from pan and place on cooling rack. (You will have to do several batches if making both batters).
  4. Once donuts are completely cooled, decorate with desired toppings and ENJOY!

Recipe Notes

*You can also swirl the 2 batters together while spooning in the donut pan to create a marbled donut!
*To torch the marshmallow, you can use a kitchen torch, or you can stick the marshmallows on the donut with a little of the glaze, and place under the broiler to toast, watching very carefully. Once toasted, remove from the oven, drizzle with melted dark chocolate, and add crushed graham crackers
*You don't have to make both batters, you can do just chocolate or just vanilla if you'd like. Each makes about 8 donuts.
