Jalapeño Turkey Burgers with Grilled Corn Cotija Salsa and Avocado

Ingredients

  • 1 lb. ground turkey breast (I used 99% lean)
  • 1/2 medium yellow onion, diced
  • 1 jalapeño, seeds and ribs removed, finely chopped
  • 2 tsp. cumin
  • 1 1/2 t. chili powder
  • 1/2 tsp. garlic powder
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 4 ears corn
  • 1 T. olive oil
  • 1/2 c. diced red onion
  • 1/3 c. chopped cilantro
  • juice of 2 limes
  • 1/2 c. crumbled cotija cheese
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • whole wheat buns, toasted if desired
  • bibb lettuce for topping
  • avocado for topping

Instructions

  1. To a medium bowl, add ground turkey, yellow onion, jalapeño, cumin, chili powder, garlic powder, salt, and pepper. Mix with your hands to combine and form into four equal sized patties.
  2. Rub the corn with olive oil and season with a little salt and pepper. Set aside. 

  3. Preheat grill or grill pan to medium high heat, and grill the burgers about 4-5 minutes per side until cooked through. While grilling the burgers I grilled the corn as well, turning them every minute or so, to get an even char.
  4. To make salsa, cut the corn off the cob and add to a medium bowl. Stir in red onion, cilantro, lime juice, cotija cheese, salt, and pepper. Season to taste and add a little more lime if desired. Add burgers to buns and top with lettuce, avocado, and corn salsa. Serve!
