Ingredients

  • 3 cups unsweetened vanilla almond milk
  • 1 teaspoon cinnamon, plus extra for topping
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon turmeric
  • pinch of salt
  • 1 teaspoon coconut oil
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon pure maple syrup, plus extra for serving
  • 1 cup steel cut oats
  • 1/2 cup grated carrot
  • 1/3 cup unsweetened coconut flakes, plus more for topping
  • 1/3 cup golden raisins, plus more for topping
  • 1/4 cup chopped walnuts, plus more for topping
  • hemp seeds for topping

Instructions

  1. Combine almond milk, cinnamon, nutmeg, turmeric, a pinch of salt, coconut oil, vanilla, and maple syrup in a medium saucepan and bring to a boil. Once boiling, add oats and carrot and reduce to medium/low heat and cover. Simmer for 10 minutes, then add the coconut, raisins, and walnuts.

  2. Cook for an additional 5 to 10 minutes, stirring frequently, until most the liquid is absorbed and oats are tender, cooked through, and creamy. Portion into bowls and top with extra coconut, raisins, walnuts, a sprinkle of hemp hearts, a drizzle of maple syrup, and a sprinkle of cinnamon if desired.
