Begin by mixing the cinnamon and sugar on a small plate. Take the glass and rub a lime wedge around the edge, and rim the glass with the cinnamon sugar. Add lime juice and mint leaves to the glass and muddle with a muddler or end of a wooden spoon. Add several ice cubes to the glass.
Add a few ice cubes to a cocktail shaker, and add cider and rum to the shaker. Shake vigorously for 15 seconds. Pour into glass and top with diced apple, then the splash of ginger beer. It is very strong, so you only need about 1/2 an ounce! Garnish with additional lime and mint springs.
