Healthy Nutella Sea Salt Truffles

These Healthy Nutella Sea Salt Truffles are an incredibly delicious chocolatey treat, made with only 6 ingredients! All you need: dates, hazelnuts, vanilla, cocoa powder, dark chocolate, and sea salt! They taste just like nutella, and they're much better for you!

Ingredients

  • 1 cup dry roasted hazelnuts*
  • 3 tablespoons unsweetened natural cocoa powder
  • 1/4 teaspoon salt
  • 1 1/2 cups packed medjool dates (about 16 dates)
  • 1/2 teaspoon vanilla extract
  • 6 ounces dark chocolate, chopped
  • chopped dry roasted hazelnuts for sprinkling
  • flaky sea salt for sprinkling

Instructions

  1. To a food processor, add the hazelnuts, cocoa powder, and salt. Pulse until very finely ground, like a coarse sand. Add the dates and vanilla and process until mixture forms a "dough". This might take several minutes, and you might have to stop and stir in the process to get things moving.

  2. Roll mixture into 17-20 balls and place on a parchment lined plate or baking dish. Place chopped chocolate in a microwave safe bowl and microwave in 30 second increments or until melted, stirring in between. Mine took about 1 1/2 minutes.

  3. Using a fork, carefully coat the balls in the chocolate, letting the excess drain off through the fork. Repeat until all truffles are coated. Place truffles in the freezer for about 10 minutes, until the chocolate sets.

  4. Drizzle the truffles with thin drizzles of dark chocolate, then quickly sprinkle with the chopped hazelnuts and flaky sea salt (the chocolate will set up fast because the balls are cold!) Repeat until all truffles are decorated. Enjoy! These keep great in the fridge for up to 2 weeks!

Recipe Notes

*I buy dry-roasted, unsalted hazelnuts from Trader Joe's, but if you can't find them, just toast raw hazelnuts in a dry skillet for several minutes until they're toasted and fragrant!
*This is the flaky sea salt I use and love!
