Green Goddess Guacamole

This Green Goddess Guacamole is perfect for spring! It's filled with lots of fresh herbs - cilantro, chives, tarragon, and basil! I love serving it with green vegetables, and chips of course. It's such a fun take on classic guac, and it's super festive for St. Patty's Day too!

Ingredients

  • 4 avocados, pitted
  • 1/4 cup plain Greek yogurt*
  • juice of 1 lime
  • juice of 1/2 a lemon
  • 1/3 cup finely diced red onion
  • 1 clove garlic, minced
  • 1/4-1/2 teaspoon salt, to taste
  • 1/4 cup cilantro, chopped
  • 2 tablespoons chopped basil
  • 2 tablespoons chopped chives
  • 1 tablespoon chopped tarragon
  • broccoli, snow peas, asparagus, and/or tortilla chips for serving!

Instructions

  1. In a medium bowl, combine the avocados, Greek yogurt, lime juice, lemon juice, red onion, garlic, and 1/4 teaspoon of salt. Mash with a fork until desired consistency is reached. Add the cilantro, basil, chives, and tarragon and stir to combine. Season to taste with the additional 1/4 teaspoon of salt, if desired. Serve with vegetables and/or chips!

*I used 0% Greek yogurt here, but 2% or full-fat would yield an even creamier result!
