Fig Bacon Couscous Salad with Mozzarella, Basil, Chives, and Balsamic Vinaigrette

This summery couscous salad is filled with gorgeous fresh figs, bacon, mozzarella, basil, chives, and a super simple balsamic vinaigrette!

Ingredients

For the salad

  • 1 (8 ounce) package Israeli couscous (can sub orzo if desired)
  • 8 slices bacon, cooked and crumbled
  • 8 fresh figs, quartered, plus a few extra for topping
  • 3/4 cup fresh mini mozzarella balls, halved
  • 2 tablespoons chopped chives, plus extra for serving
  • 2 tablespoons chopped fresh basil, plus extra for serving
  • balsamic glaze for topping

For the dressing

  • 1 clove garlic
  • 1 tablespoon fig jam
  • 1/3 cup balsamic vinegar
  • 1/2 cup olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Bring a pot of water to a boil for the orzo. Cook according to package directions. Drain and then rinse with cold water. Make sure it has cooled before assembling the salad.

  2. Make the dressing. Combine garlic, fig jam, balsamic vinegar, olive oil, salt, and pepper in a food processor or blender. Blend until smooth and creamy.

  3. To assemble the salad, combine cooled couscous, bacon, figs, and mozzarella balls in a large bowl and stir gently to combine. Add desired amount of dressing (you will have a bit leftover), as well as the chives and basil and stir to combine.

  4. To serve, top with a drizzle of balsamic glaze, extra chopped chives and basil, and more fresh figs!
