This hibiscus chia fresca is a super summery, refreshing, and all-natural energy drink! It's sweetened with honey and delicious served with lime!
Bring water to a boil. Add honey and dried hibiscus flowers and stir. Remove from heat and let the flowers steep in the water until it has cooled completely.
Once cooled, strain mixture through a fine mesh strainer into a pitcher or jar. Discard the dried flowers. Add the chia seeds and stir or shake to combine. Let sit on the counter for 30 minutes, shaking or stirring every 5 minutes.
Refrigerate until cold, and serve with lime wedges! (I like to keep shaking mine during the refrigeration process so that the chia doesn't stick together too much, but it isn't necessary!)
