Watermelon Mint Lemonade

This watermelon mint lemonade is SO refreshing for summer and it's sweetened with a honey mint simple syrup instead of sugar!

Ingredients

  • 3/4 cup water
  • 3/4 cup honey
  • 8 mint leaves, plus extra for serving
  • 6 cups fresh watermelon chunks
  • 1 cup freshly squeezed lemon juice (from about 8 or so large lemons)

Instructions

  1. Add water and honey to a small saucepan. Bring to a boil. Stir constantly until honey is dissolved. Remove from heat and add mint leaves. Let cool completely.

  2. Add watermelon to a blender and purée until smooth. Strain watermelon juice through a fine mesh sieve into a large bowl or pitcher. Discard the "pulp".

  3. Add the lemon juice and cooled honey mint syrup to the watermelon juice. Add to a pitcher and stir in a handful of mint leaves, maybe 8-10. Serve over ice and enjoy!
