Chipotle Chocolate Turkey Chili

This chipotle turkey chili has a secret ingredient: dark chocolate! It adds the perfect amount of richness and flavor, and compliments the chipotle and spices beautifully! It's super easy to make too!

Ingredients

  • 1 tablespoon olive oil
  • 1 large yellow onion, chopped
  • 1 red bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 chipotle pepper (from a can of chipotles in adobo, very finely chopped, or add two if you like spicy!)
  • 1 pound lean ground turkey
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 2 teaspoons onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 2 (15 ounce cans) tomato sauce
  • 1 (14.5 ounce) can diced tomatoes
  • 1 tablespoon pure maple syrup
  • 1 (14.5 ounce) can pinto beans, drained and rinsed
  • 1 (14.5 ounce) can black beans, drained and rinsed
  • 1/2 bar (about 1.5 ounces) dark chocolate (I use Chocolove 70% dark!)
  • sliced avocado for topping
  • chopped cilantro for topping
  • sour cream for topping
  • freshly grated pepper jack cheese for topping
  • lime wedges for serving
  • tortilla chips for serving

Instructions

  1. Heat the olive oil in a large pot or dutch oven over medium-high heat. Add the onion, bell pepper and garlic and sauté for 5-6 minutes, stirring frequently, until veggies have softened and are starting to turn golden. Season with salt and pepper.

  2. Add the chipotle pepper and sauté for another 2 minutes. Add the ground turkey, chili powder, cumin, onion powder, paprika, smoked paprika, and salt. Cook for 5-6 minutes, until turkey is cooked through, breaking up the turkey into small pieces with your spatula.

  3. Add the tomato sauce, diced tomatoes, maple syrup, pinto beans, and black beans and raise heat to high. Bring to a boil, and once boiling, reduce to medium-medium/high and cover. Simmer for 30 minutes, then uncover and simmer for an additional 15 minutes.

  4. Once chili is finished cooking, add the chocolate and stir until completely incorporated. Let cool for a few minutes before serving. Portion into bowls and top with sliced avocado, cilantro, sour cream, pepper jack cheese, and lime wedges. Serve with tortilla chips!
