Dark Chocolate Chai Cashew Butter Rice Crispy Treats

These Dark Chocolate Chai Cashew Butter Rice Crispy Treats are a grown-up, healthier take on the classic snack we all know and love. They're made with brown rice cereal, cashew butter, chai spices, and maple syrup, and they're topped with a layer of dark chocolate and flaky sea salt. There insanely delicious and addicting, and they keep great in the freezer for whenever you need something a little sweet!

Ingredients

  • 1/2 cup cashew butter*
  • 1/3 cup pure maple syrup
  • 2 teaspoons vanilla extract
  • 1 teaspoon cinnamon
  • 1 teaspoon cardamom
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 3 cups brown rice crisp cereal*
  • 10 ounces dark chocolate, chopped
  • flaky sea salt

Instructions

  1. Line an 8x8 square baking dish with parchment and spray with nonstick spray. Set aside.

  2. Combine the cashew butter, maple syrup, vanilla, cinnamon, cardamom, ginger, cloves, nutmeg, and salt in a medium saucepan. Heat over medium-low heat for a minute or so until melted. Whisk to combine.

  3. Add brown rice crispies to a medium mixing bowl and add the cashew butter mixture. Stir until completely combined and cereal is moistened. Press mixture firmly and evenly into prepared pan.

  4. Add chopped chocolate into a medium microwave safe bowl and heat in 30 second increments, stirring in between, until melted. Be careful not to overheat, as the chocolate will seize up! Pour chocolate over the crispy treats and spread evenly with the back of a spoon or rubber spatula. Sprinkle with sea salt. Freeze until the chocolate is set, then cut into bars and enjoy! I like to sprinkle mine with a little extra cinnamon and cardamom, but that's completely optional!

Recipe Notes

*This is the cashew butter I use and love. It's incredible. Any cashew butter will work here though! You could sub almond or peanut butter, but they may overpower the chai spices!
*I used these brown rice crisps!
*Crispy treats will keep in the freezer for up to 1 month!
