Spiced Roasted Chickpeas

IMG_0400These are so addicting.

I make these all the time as a healthy snack, and you can do so many variations of them. This specific recipe is for my favorite combo of spices, but you can really do any mixture you like.

I just love anything crunchy and it is so fun to play with flavors. You can even do a chipotle chili powder, cumin, red pepper flake variation, or a curry spice  variation. The possibilities are really endless, but here is my personal fav…

(I would also recommend doubling this..they will go fast. The spice mix makes enough for 2 batches).

-1 (or 2) 15 oz. cans of chickpeas, drained, rinsed, and patted dry between paper towels
-1 tsp. chili powder
-1/2 tsp. smoked paprika
-1/4 tsp. cayenne pepper
-1/2 tsp. dried rosemary
-1/4 tsp. garlic powder
-pinch of salt and pepper
-2 T. olive oil

Preheat oven to 425℉. Combine all spices, and salt and pepper in a small bowl. Put chickpeas on a baking sheet, and sprinkle 2 1/2 tsp. of the seasoning on the chickpeas if using one can, or all of the spice mix if using two. Drizzle a tablespoon or two of olive oil onto the chickpeas, and move around with your hands to coat.

Place in oven, and bake for 20-25 minutes or until golden and crispy, shaking the pan every 5-10 minutes or so. Let cool, and enjoy! So simple.

    Jan, there is a little sea salt in there, but it really doesn’t need it with all of the spices. I personally love salt so I added a couple pinches! You could definitely make this without it though.
