Rose Lavender Honey Iced Lattes

These Rose Lavender Honey Iced Lattes are sweetened with a honey simple syrup made with dried lavender and rosebuds! The simple syrup is free of refined sugar and gives the most beautiful floral sweetness to these lattes. They’re an incredibly delicious treat to brighten up your mornings or summer afternoons!

I’ve been SO incredibly excited to share these lattes with you. OMG. My love for iced coffee runs deep, and if you follow me on Instagram you know this. If it’s -20 degrees with a windchill in January, you’ll still find me with an iced coffee or latte. Something about them just tastes better and feels more fun and special than hot coffee. Call me crazy, but it’s true!

This version is so unbelievably delicious and beautiful thanks to honey sweetened lavender rose simple syrup. I know it sounds super fancy, but it’s truly the easiest thing EVER to make.

All you have to do to make this syrup is boil water, honey, dried lavender, and dried rosebuds, then let it cool, and strain it.

And you’re left with this! It’s adds the most PERFECT slightly sweet, floral note to these coffees, without being overpowering.

If you’re wondering, where the heck do I get dried lavender and rosebuds?! This is the lavender I use, and these are the rosebuds I use. And you can use them for so many different desserts, and they last forever!

This is one of my favorite recipes to use lavender in, and this is one of my favorites to use roses in! Can’t go wrong with doughnuts and lots of chocolatey goodness. 😍

Just look at that pinky purple simple syrup at the bottom! It’s so pretty.

If you don’t have an espresso maker, you could use really strongly brewed coffee for these, no problem. Or if you’re a cold brew person, you could totally use that!

Basically anything you add this syrup to is going to be amazing.

I personally like using whole milk for these lattes, just because of the creaminess factor and taste. I don’t have any issues with dairy, but if you do, you could substitute a nut milk here. Vanilla almond milk would be delicious too. But if you can, definitely use whole milk!

The other thing I love about the syrup, is that it’s refined sugar free. Only sweetened with honey. I’m not a big fan of having sugar in my coffee, especially in the morning. But honey, gives just the perfect amount of sweetness, and won’t give you a sugar crash.

And it’s a lot more cost effective than buying coffees out every day. Which I’m definitely not against. It’s such a treat! But this is a great option if you like making your coffee at home, or are looking for something different!

I first got the idea for these from this super amazing coffee place near where I live. As soon as I saw their rose latte on Instagram, I knew I had to get it immediately. They garnished it with a fresh rose petal, just like I did here, so my millennial brain was obviously obsessed with it and how beautiful it was. I can’t help it! 💁🏻

These would be absolutely perfect to make if you’re hosting a ladies brunch. Especially if you garnish them with a fresh rose petal, and/or a dried piece of lavender, people will go crazy.

I kind of just want to have a brunch party so I can make these actually. And serve them with cocktails too! And these doughnuts, obviously. I’d probably even turn it into a doughnut bar with different types of sugars to roll them in!

Doing that ASAP.

The syrup keeps really well in the fridge for up to 2 weeks, maybe even longer. And you can use it for anything and everything! On pancakes, drizzled on a warm muffin, drizzled over ice cream, mixed into oatmeal, etc. Endless possibilities!

Rose Lavender Honey Iced Lattes

These Rose Lavender Honey Iced Lattes are sweetened with a honey simple syrup made with dried lavender and rosebuds! The simple syrup is free of refined sugar and gives the most beautiful floral sweetness to these lattes. They're an incredibly delicious treat to brighten up your mornings or summer afternoons!

Servings 1 latte, is easily multiplied (makes lots of extra syrup)

Ingredients

For the rose lavender honey simple syrup

  • 3/4 cup water
  • 3/4 cup honey
  • 1/4 cup dried culinary lavender*
  • 1/2 cup dried rosebuds*

For the latte

  • 1 tablespoon rose lavender honey simple syrup
  • 1 shot of espresso
  • 1/2 cup whole milk*
  • crushed ice
  • fresh rose petals or lavender for garnish, optional

Instructions

  1. In a medium saucepan, bring the water, honey, lavender, and rosebuds to a boil. Once boiling, stir for 10 seconds, remove from heat, and stir until honey is dissolved. Let cool completely. Once cooled, strain mixture through a fine mesh strainer into a container and discard lavender and rosebuds. Syrup will keep in a sealed container in the fridge for up to 2 weeks.

latte

  1. Add the simple syrup to a glass. Fill glass with crushed ice. Pour the espresso shot over the ice, and top with milk. Stir really well to incorporate the syrup into the drink. Top with a fresh rose petal and/or a sprig of lavender if desired. Enjoy!

Recipe Notes

*This is the dried culinary lavender I use. It keeps for a long time and is great to use in other desserts, like these doughnuts!
*These are the dried rosebuds I use. Also a great addition to desserts and cocktails. Like these healthy truffles!
*I like to use whole milk for these lattes for taste and creaminess, but if you don't tolerate dairy, a vanilla almond milk would work!
*If you don't have an espresso maker, you could use really strong coffee for these, or even cold brew!
*This recipe makes 1 small latte, but if you want a large latte, simply double it! The simple syrup makes enough for 10+ lattes.
*The extra simple syrup will keep in the fridge for up to 2 weeks, and you can use the extra for adding to cocktails, drizzling on pancakes, warm muffins out of the oven (YES), ice cream, or even oatmeal!

    Can you use lavender essential oil instead of the dried lavender?

      I think you could, I’m just unsure of the amount because I’m not experienced with using essential oils in food/drink applications! Let me know if you try it!
