Whole Wheat Cranberry Orange Pistachio Muffins with Vanilla Bean Glaze

The title of these muffins is kind of ridiculous, I know. I couldn’t leave anything out! Every ingredient in these muffins contributes to their amazingness. They taste like the holidays. Tart cranberries, fragrant orange, and crunchy pistachios mix together perfectly. I used whole wheat flour, and they’re sweetened with just maple syrup! So, they are a bit lightened up as well! I had to top the muffins with a vanilla bean glaze, because vanilla bean makes everything wonderful and warm.

Can you believe it’s the week of Thanksgiving already?! I can’t. I know it’s cliché, but I really don’t know where time goes. Today, tomorrow, and Wednesday I’ll be sharing three appetizer/side dish recipes for all of you last-minute planners! Starting today, obviously, I’m sharing this beauty of an appetizer. Tons of cheese, crusty Italian bread, tangy, chewy sundried tomatoes, and garlicky basil pesto. All baked together into a pull-apart bread! I could seriously eat this stuff all day, every day, and never get tired of it.

These cute little toasts are such a flavor bomb of smoky, sweet, creamy, herby, and nutty. And you have crunch! From the toasted pumpkin seeds. You know I always need crunch.

This thing should come with a warning label. It’s SO decadent, indulgent, and completely fall weekend brunch worthy. Cinnamon sugary, pillowy, yeasted pull apart bread covered in a thick cream cheese frosting just says it all. I don’t think I need to explain to you how wonderfully delicious this is.

It’s definitely meant for those lazy weekends when you have a little extra time on your hands. Don’t let the length of the directions and preparation time scare you! It’s SO worth it.

Summery Toasts…5 Ways!

TOAST. One of my favorite things in the ENTIRE WORLD. I eat it almost every day in some way shape or form, whether it be avocado toast with an egg for breakfast, peanut butter/almond butter toast with banana and honey and flaked coconut, just plain ol’ peanut butter toast for a snack, toast with coconut butter, toast with cashew butter and blueberries…you get it. The list goes on and on. This girl LOVES her carbs and always has.

I love taking advantage of beautiful seasonal produce, and I thought doing a variety of summery toasts was a great way to showcase that. These can be eaten for lunch, snack, an appetizer, dinner…heck, even breakfast. They’re TOO good. If you can’t tell already, I’m kind of in love with them.

Quinoa Flour Chocolate Chip Banana Bread (gf, df)

In case you haven’t noticed, I’m kind of in love with banana bread. See also this, this, and this. I mean, who doesn’t love it? It’s so comforting and just all around delicious, especially when chocolate is involved. This recipe is no exception. I absolutely LOVE experimenting with alternative and healthier flours with higher protein and lower carb content. This bread is also naturally sweetened with maple syrup, so there’s no refined sugar, and it’s gluten free and dairy free as well. How awesome?!

Banana bread will always be one of my favorite indulgences. There’s something so comforting and nostalgic about the wonderful scent that fills the house when it’s baking. If you’re anything like me and have little to no self control when it comes to banana bread, it’s kinda dangerous to have a whole loaf sitting around. This is a much healthier option to cure that banana bread craving that you don’t have to feel guilty about eating. And the CHIA JAM. Oh my god. It’s so darn good. The texture of those chewy little seeds and fresh blueberry flavor in between the oat-y cinnamon-y banana bread layers is to die for…and this recipe is gluten free, flour free, and refined sugar free! Magic.
