I definitely have a thing for fruit grilled cheeses. This one is no exception. I wanted to make a fall inspired sandwich, and this definitely fits the bill. I used honeycrisp apples… the ONLY apples in my opinion..and added some freshly grated cheddar and this ridiculous creamy mascarpone spread. It has a little sweetness and one of my favorite herbs ever..sage. My mom used to make this chicken and pasta with a ton of sage and white wine when I was little alllll the time. I could never get enough of it. I have always loved sage. Ugh look at that crispy cheese stuck to the outside.
Do yourself a favor and make this.
Makes 1 grilled cheese.
10-12 slices honeycrisp apple (very thinly sliced)
heaping 1/2 c. freshly grated cheddar cheese (mild, medium, sharp, whatever you like!)
2 T. mascarpone cheese
1 T. chopped fresh sage
1 tsp. honey
pinch of allspice
1/4 tsp. salt
1/4 tsp. pepper
2 slices hearty bread of your choice
butter for spreading
Make the spread. Combine mascarpone, sage, honey, allspice, salt, and pepper in a small bowl. Stir to combine until all ingredients are incorporated. Preheat a nonstick skillet to medium heat. Butter outsides of bread slices with softened butter, and spread the marscapone mixture evenly on the insides of both bread slices. Sprinkle half of cheese on bottom half, then arrange apples on top. Top with remaining cheese and other slice of bread. Put sandwich in preheated pan and cook for at least 4 minutes per side. I usually do 2 then flip, 2 then flip, and repeat until the cheese is gorgeous and melty and the bread is golden and crispy.
