Chocolate for breakfast? Always a good idea, in my opinion. Especially dark. I LOVE making homemade granola because you can play with flavor combos and it is SO much healthier and less sugary than store bought granola. Most of the granola on the shelves these days are pure sugar, you might as well be crumbling cookies and brownies on your yogurt. The dark chocolate paired with the tart dried cherries in this is FAB..plus vanilla bean. One of my favorite ingredients in the world. Sprinkle this on yogurt, my personal fav, eat it as cereal, or just a snack! Or on ice cream..endless possibilities.
1/4 c. + 1 T. coconut oil (in solid form), then melted
1/3 c. brown sugar
1 tsp. salt
1/2 tsp. cinnamon
2 T. honey
1 tsp. vanilla
1 vanilla bean, seeds scraped
3 c. old fashioned oats (not instant)
1 c. sliced almonds
1 c. dried cherries
3.5 oz. dark chocolate, coarsely chopped into chunks
Preheat oven to 350℉. Line a large baking sheet with parchment. In a medium saucepan, combine melted coconut oil, brown sugar, salt, cinnamon, honey, vanilla, and vanilla bean, and heat over medium/high heat. Cook for 1-2 minutes. whisking until sugar has dissolved.
Pour oats and almonds into a medium bowl, and pour sugar/oil mixture over, stirring with a large spoon, until all ingredients are moistened. Pour onto baking sheet and bake for 20 minutes, “flipping” the oats a couple of times during cooking time. Watch carefully, make sure the almonds don’t get too dark, you just want them to be golden. Remove from oven and let cool completely, then break into pieces/chunks. Store in an airtight container.
Put this on everything.
