I love fruit salsas, especially peach and mango. I have never added kiwi before, but it turned out to be a hit. This salsa is so delicious.
It is a great addition to fish tacos, or to put over a piece of grilled chicken or fish. I just ate mine with tortilla chips but I can’t wait to put it on some fish tacos.
3/4 c. diced mango (about 1/2 of a large mango)
handful grape tomatoes (about 1/2 c.) diced
2 kiwi, diced
1/2 cup red onion, diced
zest of 1 lime
juice of 1 lime
1 T. rice wine vinegar
1 T. olive oil
1 T. honey
1/4 c. chopped cilantro
pinch of red pepper flakes
salt and pepper to taste
Combine all ingredients in a medium bowl, and stir to combine. You can serve it right away, or let it chill for a couple hours to let the flavors do their thing. Up to you! Keeps for several days in the fridge.
