Peach Caprese with Mint, Pistachios, and Honey

Peach Caprese with Mint, Pistachios, and Honey is the easiest, 7 ingredient appetizer you need for summer! The combination of flavors and fresh ingredients is the most perfect balance of sweetness, acidity, saltiness, and creaminess! It belongs in your arsenal for when you need a last minute, easy & delicious recipe for summer entertaining!

June, I am ready for you! As soon as peaches start showing up at the grocery store, I am all for it. My motto is to always take full advantage of all the beautiful seasonal produce while you can. And that goes for every season. I’ve always been so inspired by the seasons, and summer is right up there with my fave (sorry summer, fall will always have my heart!). But let me tell you, I’m HOOKED on this combo. I made this a couple summers ago for the first time during a family vacation, and it was a huuuuge hit. I served this alongside regular tomato, mozzarella, and basil caprese, and the peach version went even faster. Such a nice change!

I’ll always be a sweet and savory girl. At the end of the day, savory has my heart, but this combination of sweet & savory is too good for words. The peaches with fresh mozzarella, drizzle of honey, and pinch of flaky sea salt is incredible. The salty pistachios add another crunchy dimension which I always need, and the mint makes it super fresh. Basically, we’ve got all of the flavors going on.

Another huge bonus is that this comes together in less than 15 minutes. No cooking involved. Just slicing some peaches and mozz, a little drizzling of honey and champagne vinegar, a sprinkling of pistachios and mint, and you’re there.

Which makes this recipe the BEST kind of recipe for no fuss, last minute summer entertaining.

As the peaches get juicier and more in season, this “recipe” will get even better. I’m almost embarrassed to share this as a recipe, but it’s too good not to! I promise you’ll love the flavors and the simplicity.

I will say that with this recipe, the quality of ingredients does matter. No one wants a hard, flavorless peach, right?! Be on the lookout for good peaches for this recipe.

All you need for this peach caprese with mint is a short list of ingredients.

  • a few of the juiciest peaches you can find
  • fresh mozzarella
  • roasted, salted pistachios
  • champagne vinegar
  • olive oil
  • honey
  • fresh mint
  • flaky sea salt!

They’re the simplest of ingredients, but totally magical together. Also – no need to be crazy about your measurements with this recipe. Do your drizzling according to how you like things – if you don’t like things sweet, use less honey. If you like super vinegary caprese, add more vinegar! If you’re an olive oil freak like me, add more olive oil.

This “recipe” is super forgiving. All that matters is that you have the juiciest, best peaches. It makes all the difference! Funny enough, this early in the season, I’ve been finding really really good ones. I hope it continues through August because I need to make this approximately 15 mote times until summer is over. 🙂

Ingredients

  • 2-3 ripe peaches, thinly sliced
  • 1 pound fresh mozzarella, sliced
  • 1/4 cup champagne vinegar
  • 2-3 tablespoons extra virgin olive oil
  • 1/4 cup roasted, salted chopped pistachios
  • fresh mint for garnish
  • 2 tablespoons honey
  • flaky sea salt for sprinkling

Instructions

  1. Arrange the slices of mozzarella on a platter. Top with thinly sliced peaches. Drizzle with champagne vinegar, then olive oil. Sprinkle on the chopped pistachios, and garnish with fresh mint leaves. Drizzle with honey, and sprinkle with flaky sea salt to finish.
