I have been super into salsas lately, especially with all of the fresh produce available in the summer. My mom came home with these GORGEOUS peaches and nectarines from a little local produce stand, and I had some leftover grilled corn from . So, I decided to make a yummy fruit salsa with a little twist..I even added cantaloupe and cucumbers and mint! I usually always add cilantro to my salsas, but the mint in this was super refreshing and delicious! (I garnished it with a little cilantro).
1/2 c. diced peaches
3/4 c. diced nectarines
3/4 c. diced cantaloupe
3/4 c. diced English (seedless) cucumber
1/2 c. grilled corn
1 serrano pepper, seeds and ribs removed, finely chopped
1 1/2 T. fresh mint, chopped
2 T. rice wine vinegar
1 T. honey
1 T. olive oil
juice of 1 lime
1/4 tsp. salt
1/4 tsp. pepper
Combine all ingredients in a medium bowl. Stir to combine, and season to taste with additional salt and pepper. Refrigerate for a couple of hours to let flavors develop and marinate. Serve with chips, or put on tacos, grilled chicken, or fish!
