Pitaya Bowls

How gorgeous are these?! I can’t get over the color. I finally found dragonfruit pureé in Denver while visiting my brother (dragonfruit = pitaya). I can only find the acai packets at my local Whole Foods and I kinda had a mini heart attack when I found pitaya packs at my brother’s local grocery store. These are full of health and not to mention SO fun to eat because of the color and texture. These are incredibly versatile and you can top them with pretty much anything you want!

These are what the packets look like. If you can’t find pitaya, Whole Foods carries the acai packets which are just as good IMO, just not as pretty 🙂

OMG. How is this a food?

For one bowl:

1 (3.5 oz.) pitaya or acai packet
1/2 medium banana, previously sliced and frozen
1/4-1/2 c. unsweetened vanilla almond milk

Topping ideas:
blueberries
kiwi
granola
shredded coconut
toasted coconut
chia seeds
hemp seeds
sliced banana
sliced strawberries
blackberries
almond butter
any nut butter
sliced almonds
the possibilities are endless…

Add frozen pitaya packet, frozen banana, and almond milk to blender. Blend until smooth! I usually run the packet under warm water for several seconds to defrost it a bit so i can get it out of the plastic. I also start with 1/4 c. almond milk and add up to 1/2 c. if needed. Top with desired toppings and enjoy!
