Strawberry Mint Margaritas

These Strawberry Mint Margaritas are so refreshing and perfect for spring and summer! They’re made with a easy mint simple syrup, freshly puréed strawberry juice, tequila, Grand Marnier, and lime juice of course! Pair these with some chips and guac and you’re all set!

I’m wrapping up this week of Cinco de Mayo eats with my favorite drink of all time: a margarita! I dreamed up this mint strawberry version because I’ve been having a moment with mint and strawberries this spring. They’re SO delicious and refreshing!

I found these stunning strawberries at the store they other week, and they were some of the best I’ve ever tasted. And ever since I’ve been hooked! They’ve been so sweet and juicy lately, and I cannot stop.

I’ve also been putting fresh mint in my water every day (I drink a TON of water and wanted to switch it up!), so I just put a few sprigs of mint in my water bottle and keep refilling it all day. Kind of like a low maintenance “spa water”. It’s so good!

The subtle mint flavor in these comes from the mint simple syrup. It’s just regular simple syrup, with a cup of mint leaves stirred in at the end. It’s so fresh and tastes so incredible with the fresh strawberry purée!

I mean, is there anything better?

All you do to make the strawberry purée is blend a pound of strawberries in the blender until smooth, then strain it through a fine mesh strainer! And you get left with beautiful, fresh strawberry juice.

I could just drink it like this!

But adding tequila is never a bad idea either 🙂

I love to garnish these with strawberries and a sprig of fresh mint, because the mint kind of hits you in the face (in a good way) when you’re drinking them.

Ugh is it bad that I want one right now? It’s not even noon yet.

The good thing about these, is that you can make the strawberry purée and simple syrup ahead of time, so you’re seconds away from a margarita when you’re ready to make these. And they’re great to entertain with too!

Strawberry Mint Margaritas

These Strawberry Mint Margaritas are so refreshing and perfect for spring and summer! They're made with a easy mint simple syrup, freshly puréed strawberry juice, tequila, Grand Marnier, and lime juice of course! Pair these with some chips and guac and you're all set!

Ingredients

For the simple syrup*

  • 1 cup water
  • 1 cup sugar
  • 1 cup packed fresh mint leaves

For the strawberry purée*

  • 1 pound strawberries, stems removed and halved

For the margaritas

  • 2 ounces tequila
  • 1 ounce Grand Marnier
  • 2 ounces freshly squeezed lime juice
  • 2 ounces strawberry purée
  • 1 1/2 ounces mint simple syrup
  • margarita salt for rimming the glass
  • halved strawberries for garnish
  • fresh mint for garnish
  • lime wedges for rimming the glass

Instructions

  1. Make the simple syrup. In a small saucepan, combine the sugar and water and bring to a boil. Once boiling, stir in the mint leaves and remove from heat. Let cool completely before removing the mint.

  2. Make the strawberry juice. Add the halved strawberries to a blender and blend until completely smooth. Strain through a fine mesh strainer into a bowl (you may need to use a spoon or spatula to help push it through the strainer) until you are left with juice.

  3. To make the margarita, moisten the edge of a glass with a lime wedge and rim in margarita salt. Fill the glass with crushed ice. Add a handful of ice to a cocktail shaker. Add the tequila, Grand Marnier, lime juice, strawberry purée, and simple syrup to the shaker and shake for 30 seconds. Pour into the glass and garnish with halved strawberries, a sprig of mint, and a lime wedge. Enjoy immediately!

Recipe Notes

*The strawberry purée will make enough for 4 or 5 margaritas.
*The simple syrup can be made up to a week in advance and kept in the fridge! This makes extra too!
